"The king of performance fish. Eat it twice a week, minimum."
Per fillet.
Remove salmon from fridge 15 minutes before cooking. Pat dry. Season with salt and pepper.
Mix mustard, herbs, garlic, and lemon zest in a small bowl.
Heat oven to 400°F. Heat oil in oven-safe skillet over medium-high.
Sear salmon skin-side up for 2-3 minutes until a nice crust forms. Flip.
Spread herb mixture on top of salmon. Transfer skillet to oven.
Bake 8-10 minutes until salmon reaches 125°F internal (medium) or 145°F (well done).
Salmon continues cooking after removal. Pull at 125°F for perfect medium — still moist and flaky.
Replace herb crust with 1 tbsp maple syrup + 1 tbsp soy sauce. Caramelize under broiler.
Season heavily with Cajun spice. Sear in cast iron until blackened edges.
Air fry at 380°F for 8-10 minutes. No flipping needed.
