The Ingredients

Makes 4 medium pancakes.

The Batter

  • 1 scoopVanilla protein powder (25g)
  • ½ cupOats (or oat flour)
  • 1Whole egg
  • ¼ cupEgg whites
  • ½ cupGreek yogurt
  • ¼ cupMilk (any kind)
  • 1 tspBaking powder
  • 1 tspVanilla extract
  • PinchCinnamon

Toppings (Choose Wisely)

  • Fresh berries
  • Sugar-free syrup
  • Nut butter
  • Sliced banana

The Method

Blend oats into flour (or use oat flour). Combine all dry ingredients in a bowl.

Mix wet ingredients separately. Pour wet into dry. Stir until just combined — lumps are OK.

Don't Overmix

Overmixing = dense pancakes. A few lumps are your friend.

Heat non-stick pan over medium-low heat. Spray with cooking spray.

Pour ¼ cup batter per pancake. Cook until bubbles form and edges set (2-3 minutes). Flip, cook 1-2 minutes more.

Stack, top with your choice of toppings. Eat immediately.

Variations

Chocolate Protein Pancakes

Use chocolate protein powder. Add 1 tbsp cocoa. Top with sugar-free chocolate chips.

Banana Pancakes

Add 1 mashed ripe banana to batter. Reduce milk slightly.

Meal Prep

Make a big batch. Freeze with parchment between. Microwave 30-45 seconds to reheat.
