Taco Tuesday, Fit Edition
"All the flavor, fraction of the fat. Your macros will thank you."
Serves 4 (2 tacos each).
Heat oil in a large skillet over medium-high heat.
Add turkey, break it up, and cook until browned (8-10 min).
Let the turkey get some color before breaking it up too much. Browning = flavor.
Add taco seasoning and water. Stir and simmer 2-3 minutes until liquid absorbs.
Warm tortillas (or prep lettuce cups for lower carb).
Build tacos with meat and your choice of toppings. Squeeze lime over.
Skip the tortillas. Serve over cauliflower rice with all toppings.
Sauté diced peppers and onions with the turkey for volume.
Cook a double batch. Reheat meat throughout the week for quick meals.
