Serves 4.
Mix all marinade ingredients. Toss with chicken. Let sit at least 15 minutes (or marinate overnight).
Heat large skillet or cast iron over HIGH heat. Add 1 tbsp oil.
Cook chicken in batches until browned and cooked through, 4-5 minutes. Remove.
Add peppers and onions. Cook 4-5 minutes until charred but still crisp.
Return chicken. Toss together. Squeeze fresh lime over.
Serve sizzling with your choice of wraps and toppings.
Use flank steak, sliced thin against the grain. Same marinade, 2-3 min per side.
Large shrimp, same seasoning. Cook just 2 minutes — don't overcook.
Spread everything on a sheet pan. Roast at 425°F for 20 minutes. Less hands-on.
