The Ingredients

The Beef

  • 8 ozSirloin or flank steak, sliced thin
  • 1 tbspSoy sauce (for marinade)
  • 1 tspCornstarch

The Vegetables

  • 2 cupsBroccoli florets
  • 1Bell pepper, sliced
  • 1 cupSnap peas
  • 3 clovesGarlic, minced
  • 1 tbspGinger, minced

The Sauce

  • 2 tbspLow-sodium soy sauce
  • 1 tbspOyster sauce
  • 1 tspSesame oil
  • ΒΌ cupBeef broth

The Method

Marinate beef with soy sauce and cornstarch for 10 minutes.

Mix all sauce ingredients in a bowl.

Heat wok or large skillet over high heat. Add 1 tbsp oil. Sear beef quickly, 1-2 minutes. Remove.

Add more oil. Stir-fry broccoli 2 minutes. Add bell pepper and snap peas for 1 minute.

Add garlic and ginger. Stir 30 seconds.

Return beef. Add sauce. Toss everything until sauce thickens and coats, about 1 minute.

Serve over cauliflower rice (low carb) or brown rice.

Variations

Teriyaki Style

Replace sauce with teriyaki + pineapple chunks.

Korean Style

Add gochujang to sauce. Top with sesame seeds.

Chicken Version

Sub chicken breast for beef. Same technique.
