The Perfect Side Dish
"Crisp, garlicky, done in 5 minutes. Every Chinese meal needs greens."
Wash bok choy thoroughly. Cut baby bok choy in half lengthwise, or quarter larger heads.
Mix sauce ingredients in a small bowl.
Heat wok over high heat until smoking. Add oil, then garlic. Stir for 10 seconds — don't let it brown.
Add bok choy. Toss for 1 minute until leaves start to wilt.
Add sauce. Toss and cook 1-2 minutes until stems are tender-crisp and sauce coats the greens.
Bok choy goes from perfect to mushy in seconds. Keep it bright green and slightly crunchy.
Serve immediately as a side dish.
Add 1 tablespoon minced ginger with the garlic for a brighter, more aromatic version.
Add sliced shiitake mushrooms before the bok choy. Cook until tender.
Add dried chilies or chili flakes with the garlic for heat.
